This delish dish inspires curiosity from others around you lucky to get a whiff. If you don’t like tofu, sub in a meat of your choice like chicken or shrimp.
What you need.
Rice- I used basmati
Tofu cut into cubes and patted dry.
Combine your diced vegetables in a pan with oil and sauté
When vegetables are done sautéing transfer to a bowl. In the same pan add more oil if needed then add in the rice, dose with soy sauce,siracha, and rice vinegar and toss it around letting the rice get toasty. Add in garlic. I use a cheese grater and rub the clove over it to give it a fine consistency. Toss around a few more times.
Now transfer your rice to your veggie bowl. Add more oil to the pan and add in your tofu or meat. When done transfer to your veggie rice bowl. Top with pineapple.
You could also add cashews, cilantro or ginger for additional crunch and flavor.
If you don’t like spice avoid the siracha or use a tiny amount. If you love it give it a generous swirl.
